Let's Make Beer!





LIMED LAGER

For my Suite 101
Gardening Friends. This is a special recipe
designed to sip around the pond on a warm day.
5 Gal.

terminal gravity 1.04-1.05

(2) CANS LAGER MALT EXTRACT;
I used "Cooper's Australian"
1 OUNCES DRIED CASCADE BOILING
HOPS
1/2  OUNCE AROMATIC HALLERTAUER
PELLET
1 PKG LAGER YEAST
5 RIPE LIMES WASHED WELL AND SLICED
1/2 CUP PRIMING SUGAR

Dissolve the extract in 2 gal. of water and
slowly bring it to a boil. Add the Cascade hops.
Boil a full 60 min.
Meanwhile place limes in a pot of 150 degree water and
keep it at that temp for 20 min., this kills any wild
yeasts on the fruit.
Add the Hallertauer hops the last 5 Min. of the boil.
Put the limes and their water in the primary fermenter.
Add the hot wort. Now add cold water to make 5
gal. total. Cool to 65-70 degrees add yeast.
At this point I need to add that I fermented this at
Ale temperatures of 64-68 degrees, so technically this
is a mixed style beer and not a lager.  Leave in the
primary for 24-48 hours, rack into the secondary and
let it finish for 7-10 days.  Bottle and age 3 weeks.
As with most fruit beers, this will age fairly well
and I think it will reach it's peak at about 6 weeks.
This is very refreshing, aromatic, crisp beer, perfect
for a picnic, or a break while working in your garden.



ENGLISH ALE
5 GALLONS
terminal gravity 1.007 or less

3.3 lb can john bull medium- hopped extract
4 cups light dried malt extract
1 ounce dried Saaz bittering hops
1/2 ounce dried cascade  finishing hops
I pkg ale yeast
3/4 cup priming sugar

Use same method as before. Boil dried malt with
The extract. Boil Saaz hops 30-45 min. Add cascade
Last 5 min.

PALE ALE
5 GAL.

6.6 lbs light malt extract
2 lbs honey
2 oz cluster boiling hops
1 oz cascade finishing hops
1pkg London ale yeast
1 1/4 cups priming sugar

Boil honey, malt and cluster hops 1 hour. Add cascade
Last 5 min. You can substitute equal amount of honey to
Prime.

BASIC BITTER
This was the first all malt beer I ever made
And I was sure glad I did!
5 GAL.
terminal-1.011 or less

(2) 3.3-3.5 cans light malt extract
2 ounces dried cascade boiling hops
10  grams aromatic Hallertauer pellets
1 pkg ale yeast
1 cup priming sugar

Boil cascade hops full 60  min. Add Hallertauer
The last 5 min. Of boil.

BETTER BITTER
After some experimenting, I came up with
This recipe for a  nice bitter "bitter".

3.3 lbs light malt extract
1 35 ounce can premier light malt
1/2 pound light dried malt
2 1/2 ounces dried cluster hops
1 ounce dried cascade hops
1 pkg Edme ale yeast
1/2 cup priming sugar

Boil cluster hops 1 hour.
Add cascade last 5 min.
This is a bitter "bitter" hence a better "bitter".


STOUT
5 GAL.
terminal gravity 1.014 or less

6.6 lbs john bull hopped dark malt extract
1/2 ounce Hallertauer finishing hops
1 pkg Edme ale yeast
1 cup priming sugar

Add hops last five min. Of boil.
Don't rush Stouts these heavy dark beers
Require longer fermentation and aging. Age
At least 3 months.

"Sweet" stout
This type of stout was a farmer's drink,
light on hops
With a robust dark malt flavor.
5 gal.

6.6 lbs john bull dark malt extract
1 "kicker"can Alexanders amber malt extract
1 ounce bullion bittering hops
1 pkg Edme ale yeast
1 cup priming sugar

Boil hops 1 hour. Total ferment will be 12-16 days.
Watch your hydrometer readings and don't rush it


EMPRESS STOUT
Imperial stout was commissioned by the empress
Of russia for long sea voyages because of the
"Keeping" qualities it had. This would keep well.
5 gal.

6.6 lbs dark malt extract
6.6 lbs medium malt extract
1 1/2 ounces dried bullion bittering hops
2 ounces cascade  flavoring hops
1 ounce cascade aroma hops
1 "smack pack" ale yeast
1 cup priming sugar

Add bullion hops after 15 min. Add 2 ounce
Cascade after 45 min. Add 1 ounce cascade
Last 5 min.
Because of high malt content check hydrometer
For og (original gravity) and terminal gravity.
Fermentation may take as long as 30 days .
Don't rush Stouts! Age at least 2 months.

PORTER
5 GAL

8 lbs Alexanders amber malt extract
1" kicker" can Alexanders amber malt extract
1 ounce Fuggle bittering hops
1 ounce cascade aromatic hops
I pkg. Edme ale yeast
3/4 cups priming sugar

Boil Fuggle hops 1 hour.
Add cascade last 5 min. Of boil.
Start checking hydrometer day 10, it
Will take 10-15 days to ferment.

Hoppy days porter
This porter has more hops than usual,
But I like hops.
5 gal

6.6 lbs dark malt extract
21/2 ounces Fuggle boiling hops
1/2 ounce Fuggle finishing hops
I pkg ale yeast
3/4 cup priming sugar

Boil 3 ounces hops 1 hour. Add 1/2 ounce last 5 min.
Will take up to 15-16 days to ferment.

A tip or Two
ARRG!! Or--more about water If you are uncertain about your water quality, or if you suspect your water will not make good beer, for instance too much iron, sulphur or some other mineral, use bottled water. Contact the bottler or ask at your local brew shop for a recommendation of a good bottled water for brewing.

Get a note book and keep records on things like, original gravity, terminal gravity, ingredient variations, time it took to ferment, the music you listened to while brewing, (I'm not kidding.) water treatments, in fact anything that may have affected your beer. That way you can duplicate your good batches and avoid your mistakes in the future.
