THE VIRTUE OF TEMPERANCE
TEMPERANCE is the virtue of moderation, avoiding both excess and defect in physical and spiritual undertakings. Temperance is the happy medium between too much and too little of anything. Temperance is the virtue by which we can keep our sensitive appetite in check, under the control of reason, so that we are not carried away by passions, particularly those which concern the senses of touch and taste. For example, a temperate person, eats and drinks enough to support life and preserve health, and sustain strength for daily living. This does not mean, that one can't enjoy and take delight in the taste of food, but it does exclude overindulgence in that enjoyment for its own sake.
